Regulation on the processing and on the manner and method of determining the quality and categorization of cattle and classification of carcasses and half-carcasses (cattle).

This Regulation here defines the necessary processing methods for the correct classification and categorization in terms of quality of the cattle meat (carcasses and half-carcasses). This Regulation adopts the principles contained in Council Directives related to the subject here defined. The Annex is an integral part of this Regulation.
