This Regulation prescribes the conditions for the use of food enzymes in food, including such enzymes used as aids in the production of food, to ensure consistent action on the food market with a simultaneous high level of effective protection of human health, a high level of consumer protection as well as their interests, and including fair practices in food trade, and if necessary, environmental protection. This Regulation sets for: a) a list of approved food enzymes; b) conditions for the use of food enzymes in food; and c) labelling of food enzymes that are marketed as such.
