This Regulation defines all quality and other specific requirements for baker's yeast that must be met in production and trade at all stages. Baker's yeast, in terms of the Regulation, is a product consisting of Saccharomyces cerevisiae live cells, and is intended for production/processing of bakery products and/or similar. The yeast manufacturer shall define the exact production specifications. Product specification shall contain a short description of the technological process of production, as well as the official report on the completed examination of baker's yeast (including sensory, physical and chemical characteristics).
