Order No. 1331 on food hygiene.

This Order supplements EU food-hygiene rules by setting Danish national requirements for a wide range of food-production, handling and marketing situations. It covers direct sale of small quantities of primary products to consumers or local retailers, including raw milk, eggs, live bivalve molluscs, poultry and rabbits slaughtered on farms; rules on the retail marketing of eggs; automatic milking systems; handling, heat treatment and marketing of milk, raw milk, cream and colostrum; microbiological criteria and controls for raw milk and colostrum; assistance with home slaughter; roe-stripping businesses; storage, transport, heating, reheating and hot-holding temperatures; return of food products; bulk sea transport of raw sugar; specified risk material in beef; traditional food-production methods; slaughterhouse layout for animals not transported before slaughter; food-chain information for slaughter animals; presentation of carcasses without splitting; access of pets, service animals and working animals to food businesses; reduced sampling frequencies for small producers of minced and prepared meat; farmed game, bison and wild game; and reuse of water. It also provides penalties for non-compliance.
