The purpose of this food standard is to specify the requirements for fortified maize flour and semolina, without germ, intended for human consumption, prepared from grains of common maize, Zea mays L. This standard does not apply to whole maize flour, fine maize flour, milled maize semolina, maize flour not requiring yeast, enriched maize flour, enriched maize semolina and maize products obtained by alkaline treatment. This standard also does not apply to corn flour intended for use as an additive in beer preparations or for the preparation of starch and/or gluten. The nutritional quality of maize flour is improved by fortifying it with minerals and vitamins. Maize meal can be fortified by adding the nutrients listed in Table 2 at appropriate levels, as planned.
